1 - 1.5 lbs shrimp, peeled and deveined
2 T. butter
3 cloves garlic, minced
6-8 asparagus, chopped
¼ red onion, chopped
4 or 5 roasted red peppers cut into strips
1 t. oregano
2 t. green chile powder
2 t. cilantro
Pinch or two of sea salt
Pinch of pepper
Avocado, chopped
Juice of one lime
In a large pan, melt butter over medium heat. Add asparagus, onion, and garlic and cook for about 8 minutes. Add roasted red peppers, shrimp and seasonings. Cook just until shrimp turns pink (about 2-3 minutes). Add avocado and juice of lime and stir. Remove from heat and serve with favorite side dish.
